ABSTRACT

Today’s competitive market driven economy demands new age technologies that are essential to maintain leadership, enhance the quality and sustain hygienic standards of dairy products. Nanotechnology with its tremendous applications has the potential to transform the conventional dairy industry in future. Nanotechnology has already entered into the dairy sector and attracting more and more competitors in this field. Although only a handful of 'true' nano-products are available in the market, but it is expected to increase in near future. With the increasing demand of dairy products, the application of nanotechnology has just begun. It enhances the properties of food, making them nutritionally more active and protecting it from spoilage. It opens up new opportunities that can revolutionize dairy processing industry.
