ABSTRACT

India’s dairy sector has evolved from overcoming scarcity to becoming the world’s largest milk producer, supporting over 10 crore livelihoods and contributing significantly to GDP. However, its future growth will depend on creating value beyond milk volume. With rising health awareness, urbanisation, and changing lifestyles, consumers increasingly seek convenient, nutritious, and functional dairy products. India’s protein gap presents a major opportunity, as products like paneer, curd, flavoured milk, yogurt, and cheese can be enhanced with higher protein content. The industry’s next phase will focus on purposeful premiumisation, innovation, and integrating better nutrition into familiar everyday foods, driving sustained growth and consumer loyalty.
