ABSTRACT

Whey proteins, known for their high digestibility, cost-effectiveness, superior nutritional profile, and versatility, are well suited for nanoparticle synthesis. Whey protein nanoparticles (WPNs) can be produced using various methods, such as emulsification–solvent extraction, salting out, desolvation, and electrospraying. WPNs exhibit diverse applications, including the encapsulation of beneficial functional ingredients such as 3,3’-diindolylmethane, riboflavin, zinc, curcumin, epigallocatechin gallate, and ethyl hexanoate, thereby enhancing the antioxidant, antibacterial, and sensory attributes of food systems. WPNs provide an effective platform for the encapsulation, protection, and controlled, targeted delivery of bioactive compounds.
