ABSTRACT

The dairy industry is adding new technologies to meet this increasing demand while maintaining quality and safety, minimizing its environmental impact, and creating a more profitable industry. Traditionally, dairy quality inspection has been conducted through laboratory-based microbiological and chemical analysis and sensory methods such as organoleptic visual, flavour, and texture evaluation. There are technologies that offer the ability to automate quality inspection, improve accuracy, and provide real-time monitoring of dairy products. Among such technologies, two of the most promising are Machine Learning (ML) and Digital Image Processing (DIP).
