ABSTRACT

The bacterial load in our pasteurized milk is at least 10 times more that of similar milk in Europe, Australia, and other milk-producing countries. As compared to 3 days shelf life of our pasteurized milk, they offer a shelf life of 21 days. Management of the dairies in India are aware of the status of quality of raw milk being processed by their dairies. They know that the farmers need training in basic hygiene for the upkeep of the dairy animals and surroundings. Poor operation of Bulk Milk Coolers and transportation by inadequately cleaned tankers results in RCM reaching the dairy dock with bacterial load of 1 crore bacteria per ml and MBRT of less than 40 minutes. The management has to move and take the next step towards better class milk with a shelf life of 7 days under refrigeration.
