ABSTRACT

The Mithun (Bos frontalis) is a unique bovine species native to northeastern India, integral to tribal culture and nutrition. Despite traditionally low milk utilization, recent advancements in semiintensive farming and official recognition by FSSAI have highlighted Mithun’s potential in dairy production. Mithun milk, rich in proteins, fats, essential amino acids, vitamins and minerals, offers superior nutritive value compared to cattle milk. Innovative value-added products like paneer, whey drinks, rasgulla, barfi and lassi enhance its market potential. However, challenges such as limited commercial scale and consumer awareness must be addressed to fully exploit its benefits in health and regional economies.
