ABSTRACT

Probiotics are live microorganisms that confer a health benefit to the host when administered in adequate amounts. The safety assessment of probiotics is a critical control point in the quality control of probiotic strains as there is a shift from the use of conventional probiotics to nextgeneration probiotics, as well as the constant evolution in the existing strains. In the process of selecting a new probiotic strain, it essential to examine the theoretical and clinical risks aspects fully in relation to human health before utilizing for food applications. This article features the safety criterion which hold importance from human safety point of view.
