ABSTRACT

Biofilms in the food and dairy industry have significant impacts on product quality, food safety, and equipment performance. This article explores the implications of biofilms and highlights control measures. Biofilm formation involves microorganism attachment and the production of an extracellular matrix. Besides essential cleaning and sanitation practices, innovative technologies like real-time monitoring systems and automated cleaning aid in biofilm control. Surface modification and the development of biofilm-disrupting agents offer potential solutions. Continued research and development are necessary to address biofilm challenges and ensure safer products and sustainable operations.
