ABSTRACT

India will play a leading role in feeding milk and milk products to the hungry world. At present, India contributes about 24% to total world milk production (910 MMT) per annum. New dairy products should be developed to meet overseas consumers demand for healthy foods that contribute to their overall nutritional needs and to boost immunity. Dairy processors should commission systematic market research in the emerging markets to understand consumer preferences for tasty and healthy products full of nutritional superiority, quality and food safety. Whey protein enriched milk beverages, UHT milk with A2 protein, high calcium and protein rich products and ghee can be pioneered as superior nutritional products for international markets.
